How to Steam Milk Properly (and What Automatic Frothers Trade Away)
Good microfoam is two distinct phases — stretching, then texturing — and most disappointing milk comes from merging them. The technique, and what automatic systems do instead.
Milk is half of most espresso drinks and gets a fraction of the attention espresso does. The technique is genuinely simple once you know it is two phases in order, and that most bad milk comes from running them together.
The two phases
Phase one: stretching. With the wand tip just under the surface, you introduce air. This is where volume and foam come from, and it sounds like a steady soft hiss rather than a shriek. Do it only while the milk is still cold — a few seconds is usually enough.
Phase two: texturing. Sink the tip deeper and let the milk spin. No more air goes in; the whirlpool breaks the bubbles you just made into progressively smaller ones. That is what turns foam into microfoam, the glossy texture that pours rather than sitting on top as a raft.
Get the order wrong, or keep adding air throughout, and you get stiff bubbly foam that separates from the liquid underneath. That is the difference between a cappuccino that looks like washing-up suds and one with a smooth surface.
Stop earlier than you think
Aim for around 55 to 65 °C — properly hot to the touch, not so hot you cannot hold the jug. Past roughly 70 °C the proteins denature, the sweetness goes, and it starts to taste scalded. Milk cannot be usefully re-steamed either, so overshooting means starting again.
Without a thermometer, the cue is the jug becoming uncomfortable to hold for more than a second or two.
The practical details
- Start cold, straight from the fridge. Cold milk gives you a longer working window.
- Use a jug you can fill about halfway. Too little and the wand cannot form a whirlpool; too much and it climbs out.
- Angle the tip off-centre so the milk rotates rather than churning straight up.
- Purge before, wipe immediately after. This is the most-skipped step and the reason wands block.
- Swirl and tap before pouring. Milk begins separating within seconds of stopping.
Which drink wants which texture
The classic drinks differ mostly in milk, not coffee:
- Cappuccino — more air, a thicker foam layer, less liquid milk.
- Latte — less air, more textured liquid milk, a thin cap.
- Flat white — least air of the three, all microfoam, no distinct foam layer.
- Cortado — a small amount of lightly textured milk, roughly equal to the espresso.
When a machine advertises those as separate one-touch drinks, this is largely what it is varying.
What automatic frothers trade away
Automatic systems swap control for consistency, in two broad kinds.
Automatic wands steam and texture for you on a machine that still has a wand — the Breville Bambino Plus and Barista Touch work this way, usually with temperature and foam settings. Repeatable, and you can still take manual control if you want to learn.
Fully automatic milk systems on super-automatics draw milk from a carafe or a tube straight into the cup with no jug at all — the Jura E8, De'Longhi Eletta Explore and Philips 3200 LatteGo among them. There is no technique to learn, which is the entire point.
What you give up either way is fine control: latte art needs a manual wand, and so does adapting texture to a particular milk. What you gain is the same drink every time and, on the fully automatic systems, no jug to wash.
Weigh the cleaning honestly. Any automatic system moves milk through internal tubing that must be rinsed after use, and the carafe usually needs refrigerating between drinks. A manual wand is a purge and a wipe. Neither is less work — they are different work, and the super-automatic machines page covers what each asks of you.
Non-dairy milk
Plant milks froth on different proteins and stabilisers. Oat designed for baristas is the most forgiving and comes closest to dairy microfoam; soy works but splits more readily against acidic coffee; almond is the hardest to texture well. Look for "barista" versions, which add stabiliser for exactly this. Some machines offer an alternative-milk setting that adjusts air and temperature.
The short version
- Cold milk, jug about half full.
- Stretch first — tip just under the surface, a few seconds of quiet hiss.
- Then texture — sink the tip, spin the milk, no more air.
- Stop around 55 to 65 °C, when the jug is uncomfortable to hold.

Frequently Asked Questions
Semi-automatic or super-automatic — which should I buy?+
A semi-automatic gives you the portafilter, the grinder choice, and control over dose and timing, which is what you want if the process is part of the appeal. A super-automatic grinds, tamps, brews, and froths behind a closed door for one button press, which is what you want if the drink is the point. The machines cost about the same at the middle of the market; they differ in how much of the work you do.
Do I need a separate grinder?+
For a semi-automatic, yes — an espresso grinder matters more than the machine, because espresso needs fine, evenly adjustable grind that a general-purpose blade or coarse burr grinder cannot deliver. Super-automatics and a few "all-in-one" semi-autos have a grinder built in, so no separate purchase is needed.
Is 15 bar of pump pressure better than 9?+
No. Espresso is extracted at about 9 bar at the puck; 15 bar is the pump's maximum rating, not the brew pressure, and nearly every consumer machine on the market is rated the same 15 bar. It is not a spec that separates machines, which is why we do not score it as a winner in comparisons.
